Fresh, smooth, balanced.
Covert Farms is a 650-acre, four-generations, family-owned organic farm and winery estate located just north of Oliver.
Tasted bottle 1605 of 2000.
This Cabernet comes from Covert's Coyote Block, planted in 2006 and was aged 20 months in French oak.
Black currents and plum cake aromas are layered with pencil shavings, pipe tobacco, licorice, cocoa and brown spices. It has lovely freshness, good balanced and a smooth texture. Wild forest berry, spice and tobacco flavours roll across the tongue. Good weight and decent length.
